两个都是将两句话的其中一句变成定语从句从而两句变一句的例子.你说的连接词是定语从句的关系代词.之所以第一个不用第二个要用,是因为第一个里面关系代词是作的宾语（visit的宾语）而第二个里面关系代词是作的主语（burn的主语）.关系代词作宾语时能省略作主语时则不能.
第一个的句子关系代词不省略的形式是：
The temple that we visited is the oldest in Egypt.
关系代词that 因为作宾语所以可以有,也可以没有.
the temple （we visited） is the oldest in Egypt. 将括号里面的去掉，你发现还是通顺的，因为WE VISITED在这里做插入语
